Healthy Peanut Butter Protein Pancakes

I found PB2 by accident and have used it in everything from deserts to main meals and is especially tasty in protein shakes for workouts without all the chemicals that are in most flavored protein supplements. The great thing about PB2 is the fat has been removed and even though the fat in peanut butter isn't all bad for you, if you are trying to cut out more fat or calories this is great stuff!

Regular Peanut Butter:
180 calories 2 Tbsp
140 fat calories
15 grams total fat
1 grams sugar
8 grams protein
2 grams fiber

PB2 has:
45 calories 2 Tbsp
13 fat Calories
1.5 grams total fat
1 gram sugar
5 grams protein
2 grams fiber

I'm very into nutrition and exercise but I also want more options sometimes, that's when I look for a PB2 recipe.

Try these healthy pancakes when you'd like a protein option.

PB2 Protein Pancakes (Easier than pie)

Ingredients:
1/3 c. oats
1 T. PB2
1/2 packet Stevia (or any sweetner to taste)
1 egg
1 flax chia egg (1 T. each flaxseed meal and chia seed + 3 T. water, set for 5 mins)

Blend all ingredients until well combined. Cook on skillet over medium heat for 2 minutes on each side.

Additional Tips: Peanut Butter, banana, and honey make wonderful toppings.

Makes 1 pancake
